Colombian Buñuelos Recipe

Description

Buñuelos are cheese and cornmeal balls that are probably one of the most beloved snacks among Colombians. Colombian buñuelos can be enjoyed at any time of day, but their consumption soars during the Christmas season, becoming one of the most traditional dishes of the holidays.

Our buñuelos differ from their Spanish and Mexican “relatives” in that they are not sweet desserts but quite the opposite. The cheese gives them an intense salty flavor, making them the perfect accompaniment to a cup of hot chocolate or a slice of the famous natilla.

The perfect buñuelo is fluffy on the inside and crispy on the outside. The key is to fry them over medium heat, with the oil not too hot.

In many places outside of Colombia, you can find pre-made flour specifically for buñuelos, to which you only need to add a few additional ingredients. However, there are still places where this product is not available. For those who can’t get the pre-made flour or prefer a traditional recipe, here is a very simple one.

Ingredients

  • 2 cups of grated costeño cheese or any salty cheese (Cotija can be used in the U.S.)
  • 2 cups of cornmeal
  • 1 tablespoon of cassava starch (Tapioca)
  • ½ cup of milk
  • 1 teaspoon of sugar
  • 2 eggs
  • 1 tablespoon of baking powder
  • A pinch of salt
  • Oil for frying

Instructions

  1. Mix all the ingredients, except the oil, until a homogeneous dough forms.
  2. Take portions of the dough and shape them into round balls using your hands.
  3. Fry the buñuelos in plenty of hot oil, but not at too high a temperature, so they cook completely on the inside without burning on the outside.
  4. Remove them when they are golden brown and let them drain on absorbent paper.
  5. Serve immediately.
