However, the most commonly used ingredients are Colombian beans, rice, plantains, and meat, which are staples in the Antioquia region. The dish is served with eggs, arepas, and coffee or chocolate. You can use whatever ingredients you have on hand; there’s no need to start from scratch, as this dish is not the point. Just reheat what you have available, and you’re good to go.
Ingredients
1 tablespoon of oil (I use olive oil)
1 cup (62g) of Colombian beans, cooked the night before
½ cup (125g) of cooked white rice
½ cup (75g) of grilled meat, cut into small pieces
1 Colombian chorizo, cooked and sliced
Hogao (optional)
2 Colombian arepas
2-4 fried or scrambled eggs
Instructions
Heat the oil in a large pan over medium heat and add the beans, rice, meat, and chorizo. Stir well until all the ingredients are heated through. You can also add hogao to taste.
Serve immediately with arepas, eggs, and either hot chocolate or coffee.
